Should I either, remove those 2 top cabinet doors, and get 2 long doors to cover up the hole plus the top. (I'd paint the doors white and maybe stencil them pretty)

I would paint the whole thing black (that will look good above your dark bed). The inside/back of the niche, and the cabinet doors. Change out the gold hardware for white porcelain. Now, decorate the open area as if it were a nice tablescape. Maybe four small framed prints inside hanging on the wall:
